What the food defence (taccp) risk assessment covers
Food defence is about people who mean to cause harm. This pack assesses deliberate threats to your products and your site, such as malicious contamination, tampering, extortion and unauthorised access, against likelihood, severity, past incidents, the people who could carry them out and the protective measures you already have.
It covers the facility as well as the supply chain. Many threat assessments stop at the ingredients coming in and never look at the perimeter, access points, staff, contractors and visitors. This one does, so higher risk access points and roles get stronger controls and more frequent review, and lower risks are managed proportionately.
