Regulation R638 (Regulations Governing General Hygiene Requirements for Food Premises, the Transport of Food and Related Matters), made under the Foodstuffs, Cosmetics and Disinfectants Act, sets the general hygiene rules for food premises, food handlers and food transport in South Africa. It covers premises, equipment, hygiene, the certificate of acceptability and the appointment of a person in charge. Most local food businesses must comply with R638.
A certificate of acceptability is a document required under Regulation R638 that confirms a food premises is approved to handle food. It is issued by the local authority's environmental health practitioner. Operating without a valid certificate of acceptability is an offence.
