Codex is the common ancestor of every scheme

The seven HACCP principles and the twelve implementation steps come from the Codex Alimentarius Commission, established by the FAO and WHO. FSSC, BRCGS, SQF, IFS and national food law all build on the same principles, which is why a Codex-based HACCP system is the most portable food safety documentation there is.

  • The seven principles: hazard analysis, CCP determination, critical limits, monitoring, corrective action, verification and documentation.
  • The twelve steps, including the preliminary work that is skipped most often: team, product description, intended use and flow diagram verification.
  • Prerequisite programmes, because hazard analysis assumes them and an auditor will test that assumption.
  • The foundation layer for any scheme you certify to later.

What a toolkit does, and what it does not do

You get the documented system already written and structured to the standard: the manual, procedures, forms, registers and risk assessments. That is normally the slowest part of getting certified and the part that is identical from one site to the next.

It does not implement itself. Someone at your site still has to make the documents true, with your process steps, your hazards, your suppliers and your monitoring records. Local food law, such as labelling and permits, stays local and is yours to add.

Before you buy

How does this differ from your South African HACCP toolkit?
The South African version is written to SANS 10330 and SANS 10049, the national standards. This one is written to the Codex Alimentarius principles directly, which is what applies outside South Africa and what the certification schemes build on.
Is HACCP a certification?
HACCP is a system, and in some markets it is certified in its own right. More often it sits inside a wider scheme such as FSSC or BRCGS. Either way the hazard analysis is the same work.
Why are prerequisite programmes included?
Because hazard analysis is only valid if the basic controls are already in place. A HACCP plan without PRPs pushes hazards into CCPs that should have been controlled by hygiene and maintenance, and auditors find it quickly.
Is this enough for certification on its own?
For a HACCP-only requirement, yes. For FSSC or BRCGS you also need the scheme-specific requirements, which are in those toolkits.
What language and file formats do I get?
English, as Microsoft Word documents and Excel workbooks. Nothing is a locked PDF, because a document you cannot edit is a document you cannot make true for your site.

Is HACCP alone what your customer asked for?

Some buyers accept a HACCP system; others require a GFSI-recognised scheme built on top of it. The wording of their request usually settles it, and we are happy to read it with you.
