What does Regulation R638 require a kitchen to keep?
R638 of 2018 (Regulations governing general hygiene requirements for food premises, the transport of food and related matters, made under the Foodstuffs, Cosmetics and Disinfectants Act 54 of 1972) requires documented hygiene management: temperature control evidence, cleaning schedules, pest control, food handler health and training records, and the conditions of your Certificate of Acceptability.
